Fava beans are a great replacement for peas, but it can be difficult to enjoy fresh fava beans due to having to remove a second skin after they’re taken out of the pod. To save a lot of grief freeze the shelled beans on a cooking sheet for 30 minutes. When you’re ready to use the beans, take them out of the freezer and let them thaw for 10 minutes; you’ll find the freezing and thawing process makes the second skin peel off easily.
